Inspector’s comments
Hot holding is appropriate, beef noodle soup 188F, chili 180F and spanish rice, sausage gravy and mashed potatoes between 170F and 190F. Cold holding appropriate, ground hamburger 43F, sausage gravy 41F, milk 43F, pork tenderloin 42F, scallop potatoes 43F and haddock 41F. Proper cooling procedures observed in walk-in for pork steak, potatoes, chili and split pea soup. Proper hair restraint and glove usage observed. Facility is clean and well maintained
